When you eat noodles at a restaurant, do you know the origin and the story behind the noodles? Do you know the relationship between San Francisco Legacy Businesses Mon Sing Noodle Co. and Tin Wah Noodle Co. and the Kong Family?

Mon Sing Noodle Co and the Kong Family

San Francisco’s Mon Sing Noodle Co. started its operation at 56 Beckett Alley in 1932. In 1951, due to the construction of Ping Yuan in Chinatown, the shop relocated to 1392 Pacific Avenue. With the growing population and urban development, every time goods were unloaded, large delivery trucks blocked half the street. Delivery workers had to move the flour one bag at a time into our shop. Congested traffic became an everyday occurrence in the neighborhood. In 1994, the noodle shop moved its operations to 1950 Innes Avenue #3 in the Bayview community near the San Francisco Produce Market. In 2022, Mon Sing Noodle Co. moved to its current location at 1615 Innes Avenue, Unit C, San Francisco, CA 94124.

A Bowl of Tasty, Hometown Flavor and the Human Connection

In San Francisco, there is a very special noodle with a history of 91 years called Shui Mein®, which is the signature product of Mon Sing Noodle Co. This special noodle has a strong hometown flavor. When you taste it, you will feel the rustic, elastic, and unique flavor!

Long time ago, those who made noodles back home brought their family skills to San Francisco. Many new immigrants lived a hard life in their hometowns, working long hours and wanting a better opportunity. Feeling homesick. They miss their families far away. Whenever there is a traditional festival, the older generation always cook this special Shui Mein® at family gatherings to reminisce about the life of the past, and at the same time teach the new generation to cherish today’s hard-won wealth!

Most of Mon Sing’s customers are multi-generational. The daily work and contact with customers are the source of their strength. Every special occasion, there are always some old acquaintances and customers who come to buy the noodles. Some drive themselves to buy our signature product Shui Mein®, while some children and grandchildren drive their elders to buy them for an upcoming family reunion with visiting relatives. Over the years, the relationship between Mon Sing Noodle Co. and customers have not been a simple business transaction. They greet each other like family. Mon Sing Noodle Co. take solace in seeing the younger generation grow up and accomplish their own achievements. Their noodle taste – is the human connection.

After making noodles for many years, the Kong Family realize that noodles, like people, have their own personalities, such as thin or thick, crisp, and tough, soft, and elastic. Each has its own uniqueness and style. The family of noodle-makers adhere to the concept every day. Take the craft of noodle-making to heart, deliver them to restaurants, and see chefs create their magic using Mon Sing’s products for guests’ enjoyment. It gives the team at Mon Sing Noodle Co. great encouragement to be appreciated by their patrons!

The Kong Family ran a noodle factory in Hong Kong in the 1940s. Grandfather and father took over Mon Sing Noodle Co. in San Francisco in the 1980s. They carry the legacy of making a bowl of delicious noodles and giving back to the society. Grandfather and father started work every morning before the sun came out. After making fresh noodles, they delivered the goods to Chinatown. On the way back, they bought breakfast and enjoyed it with the workers back at the shop. In the afternoons, they delivered fresh products to customers throughout San Francisco Bay Area. Rain or shine, the father and son team worked hard to make a bowl of good noodles.

The Kong Family continuously used their noodle-making skills and knowledge to improve their products, bringing their Hong Kong-style wonton noodles to San Francisco. The Kong Family’s dedication to their craft is admirable. They regarded employees as family members, encouraged newly immigrated employees to continue their education, learn English, and integrate into society. They would help people in need and treated everyone with sincerity. People can sense their noble character.

In the 1990s, the Kong Family acquired Tin Wah Noodle Co. in San Francisco. The two noodle factories have their distinctive style of products and are among the oldest noodle factories still in operation in San Francisco. Mon Sing Noodle Co. specializes in traditional Asian products and Middle Eastern and Italian pastas. Tin Wah Noodle Co. specializes in fresh artisan Taiwanese and Japanese-style products. Mon Sing Noodle Co. and Tin Wah Noodle Co. are both San Francisco Legacy Businesses.

三藩市民生麵廠1932年位於56 Beckett Alley, San Francisco。1951 年因為唐人埠興建平園的關係,遷移到1392 Pacific Avenue 繼續經營,由於人口發展,交通繁忙,每次落貨,大貨車停泊在半條馬路,由送貨工人將一包一包麺粉搬入店內,非常不便;1994年遷往 1950 Innes Avenue 隣近San Francisco Produce Market 的Bayview community。2022年遷往現址1615 Innes Avenue, Unit C, San Francisco, CA 94124

在三藩市有一種有91年歴史,很特別的麺,叫做Shui Mein®, 這是民生麵廠的招牌貨, 這種特別的麵有濃濃的家鄉味,經過餐館的師傅用心烹煮,當客人品嚐的時候,會感受到這質樸,有彈性和獨特的味道!
當年做麵的人將家鄕手藝帶來三藩市,而從家鄉來到此地的新移民,大多生活艱苦,每日辛勤工作,思念遠在他鄉的親人,就憑這來自家鄉的麵味,以解鄉愁!因這情意結,每當傳統的節日,年長的一輩總愛在全家聚會時煮這特別的Shui Mein®,懷念親人,回味當年的生活,同時教育新的一代,今天之富有來之不易!
民生的客人多數是一代傳一代,每天工作與客人接觸,是我們力量的源泉。每逢特別的日子,總有些高齡的舊相識,老客戶來幫襯,有些自己開車來買這招牌貨Shui Mein® ,有些由兒孫開車送長輩來買,説是準備同到訪的兒孫一起共聚天倫;有些年輕的顧客來買麵孝敬長輩。多年來,民生與客人的關係,並非單純的生意交易,我們像親人一樣,彼此問候,看到年輕的一代長大成人,各有成就,我們也感安慰!我們的麵味-就是人情味。

造麵多年,領悟到麵同人一樣,各有性格,有爽有滑,有脆有韌,有軟有弾牙;麺的外形,有粗有細,有厚有薄,燕瘦環肥,各有喜好,各被不同的人欣賞。我們每天堅持理念,用心造麵,送到餐舘,由師傅們精心泡製,送上給客人享用。得到客人的欣賞,是對我們極大的鼓舞!

我們的家族,江氏家族, 四十年代在香港經營粉麺廠,第三代傳人襁褓時期就在麵廠渡過。八十年代接手經營民生麵廠,希望傳承優良的傳統,將家郷的味道,做一碗好麵回饋社會。父子倆每天清晨,太陽還未出來,便已開工,打好新鮮的麵之後,將貨送到唐人街,回程時買過早餐返店和伙計們一起享用。下午又將當天新鮮的產品送往三藩市以外的客戶。不管天寒地凍,晴天雨天,父子倆拼手扺足,辛勤工作,為的是要做一碗好麵,同時不斷鑽研,將香港特色的雲吞麵推廣至三藩市。他們視員工為家人,鼓勵新上埠的員工在工餘進修,學好英文,融入社會;對有經濟有困難的人,解襄相助。有人失業,工作無着落,上門求助,父子倆安排他在廠內工作,解決燃眉之急,讓他騎牛搵馬,不用徬徨。

他們真誠待人,敬業樂業,熱心助人的高尚品格,人們看在眼裡,九十年代, 收購天華麺厰。两間麵廠各有特色,民生麵廠除了生產傳統的中國式的麵食, 還有意大利和中東特色的產品; 天華麵廠的產品包括有台灣式和日本式的麵食;江氏家族 將其發揚光大,目前民生麵廠和天華麵廠均為三藩市傳承商業Legacy Business。

近年來,經歷了疫情、經濟不景,小商業生存並不容易!
2022年面對城市的發展,我們又一次面臨挑戰,在物識新廠址預備搬遷過程,其間遭遇重重波折,我們結識了不少的新朋友,也得到不少有心人的幫助,特別是在City of San Francisco, Office of Small Business, SBDC….的幫助下,解決了各種的困難,才能得以在新址1615 Innes Avenue, Unit C, San Francisco, CA 94124繼續在三藩市營運。非常感恩!

我們深深體會到民生麵廠能夠在三藩市屹立91年,當中除了包括有我們江家四代造麵的學問和努力,同時還有賴我們的客戶-餐舘的師傅煑出美味的麵食,和得到一批支持我們的食家欣賞、前來幫襯;飲水思源,我們感謝各界朋友多年來的支持和鼓勵!我們將一如既往,以優質產品, 一碗好麵答謝各位的厚愛!
